Love Muffins

It is a sad fact of life that bad things happen to good people. Sometimes there will be people you care about who are hurting, and there is nothing you can do to help. These situations need baking more than any other. You all know by now that for me food is love. And sometimes the only way you can help someone get on with life is by loving them. One of the best things I have found to bake for people who are hurting is nummy muffins. They can be somewhat nutritious, easy to make, and easy to eat. 
A while back one of my favorite people had a rough patch. So I made him some love muffins  to fill his tummy and his freezer. I don't know how much it helped in reality, but it couldn't have hurt. 
So the next time you know someone who needs a hug, make them some love muffins.

Basic Buttermilk muffins

1 cup butter milk 
1/2 cup vegetable oil
2 eggs

3/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
2 cups flour

(if you don't have any buttermilk add 1 tbsp vinegar to regular milk and let sit 5 min)

Very simple. combine all the dry ingredients in one bowl, then combine all the wet ingredients in a different bowl. then mix the two bowls together just until they are incorporated. And you can flavor however you like. A couple tsp of vanilla, a cup of blueberries, chocolate chips, strudel, fruit, nuts, whatever will bring the joy. 
then scoop into 12 muffin cups, an bake at 375 for 20-25 min. 

I made lemon cherry with a bunch of lemon zest and organic cherries. Play around with flavors and find a favorite!
